描述

水楊酸甲酯在果實成熟中起重要作用。眾所周知，它會吸引食草動物的天敵。 MeSA抑制李子和西紅柿中氨基環丙烷-1-羧酸合酶（ACC合酶）和氨基環丙烷-1-羧酸氧化酶（ACC氧化酶）的活性，它可以抑制真菌感染并減輕石榴等水果的冷害癥狀。這種冬青油作為調味劑在煙草工業中引起了極大的興趣。它具有抗刺激和抗炎作用。
